After having a copy of this book for a while now, I just had to come back and let it be known that every single recipe I have made from this book has been a huge success! We must have a major sweet tooth in our house, because I think I have made over 15 of these recipes now. I actually even ordered some of the author’s own gluten free flour mix as well and love that it is an absolute cup-for-cup replacement for regular flour. And I have been making the pound cake recipe in her book again and again and again. No one has been able to tell that is it gluten free and I use it as a base for so many different desserts.

While I’m not a big dessert eater (for health reasons), this cookbook is a go-to favorite of mine when I need a quick and easy dessert recipe. The directions are simple and easy to follow. For the most part, it’s a no fuss cookbook and I have been happy with everything I’ve made. I love the coconut cupcakes! This cookbook makes gluten-free baking simple. It’s just a good all-around dessert cookbook, whether you’re gluten-free or not. It’s one of my favorites!

Great recipes!! I never thought I would be able to make gluten free deserts that taste good! This book has literally changed my life! I have totally convinced my friends that they can eat Gluten Free and enjoy it. The Magic Bars are my favorite!!! And the cupcakes! mmmmmmmmmm!!!!! They don’t even make regular deserts that taste this good!

I’ve tried the Breakfast Bars filled with gluten-free oats, almonds and cranberries, Carol’s Carrot Cupcake recipe with her cream cheese icing, Dairy-Free Chocolate Pots and Dairy-Free Pumpkin Creme Brulee. All were so easy to make and absolutely delicious and able to fool gluten and dairy eaters. The variety of options for dairy-free and the use of healthy grains in some recipes makes this book a classic to turn to for fancy, celebrations and full out sugar and butter recipes, to everyday desserts where you can substitute your sweeteners and avoid dairy. Carol Kicinski is known for the easy elegant recipes on her blog, Simply Gluten Free, and this cookbook shows just why she is so popular and loved in the gluten-free community.

I nearly fell into a sugar coma just looking through this cookbook! Within, you will find cake, cupcake, frosting, cookie, bar, candy, pie, tart, pudding, custard, frozen dessert, and breakfast treat recipes. And from what I’ve tried so far, the recipes look and taste amazing!

I love that the author uses easier to find flours and everyday ingredients. This cookbook isn’t dairy-free by any means (which I am), but Carol has some really fun dairy-free recipes within (Dairy-free Cream Puffs? Yes please!). Plus, I have a lot of experience in substituting for dairy ingredients and have had fun adapting the recipes.

If you are looking for gluten-free desserts that will please, then this is the cookbook for you.

I was lucky enough to be one of the recipe reviewers for this book. And, oh my gosh, are these some great recipes. Carol painstakingly tested each and every recipe. For the ones that I tested, across the board my gluten-eating friends were amazed at how delicious they were. (They didn’t always agree on their favorite ones, but they all agreed that the recipes rocked.)

“I swear to you that I never would have known there was no wheat in those cookies.”

Someone offered me a gluten-free cookie from this cookbook… I politely declined. I don’t care for “health food” cardboard replacements that pretend they are the real thing (i.e. a tofu cheesecake is NOT cheesecake!).

Well this person insisted that I try it and since I didn’t want to appear impolite I took a bite. I ended up eating several. I swear to you that I never would have known there was no wheat in those cookies.

I’ve since made several of the recipes in this cookbook and all are truly delicious. You’ll never know its gluten-free.

I was really surprised and impressed at the detail in this book and I really look forward to trying ALL the recipes. I am just beginning my journey into the world of gluten free and I really appreciate the way that Carol put her book together with such detail and description. I love a cookbook like this one that paints the whole picture of what needs to be done. I started cooking gluten free 5 years ago for a client that needed help. (I am a Personal Chef and prepare meals in the homes of clients.) When it came to GF baking and desserts, I was lost. It’s not too difficult to prepare main and side dishes that are gluten free, but GF baking is a science! Thankfully, Carol knows this science very well and has translated it into this great variety of recipes in one book. It satisfies most any recipe need, something for everyday or a special event.

The Banana Nut Muffins are the best, meaning you will not need another recipe EVER for them. Ever. I also love the versatile flour blend recipe. Try it with the Perfect Pie Crust. This pastry handles so beautifully, you will find yourself loving making pies. I usually make a lot of frustrated sighing noises with GF pastry, since it falls apart and must be patted into a pan rather than rolled out and placed. Carol’s pastry rolls out like a dream and is so forgiving, no frustrated sighs will be heard! It actually handles better than a wheat flour pastry. To me, this is the true test of her expertise at crafting recipes and a flour blend that is up to the standard needed for amazing GF baking.

There is something for everyone in this book, and I can’t wait for Carol to write another!

From one who isn’t a very good cook or baker, and doesn’t really have a lot of time to do it, I have come to love this book and it’s wonderful recipes. I am not very experienced in the baking department, so the more that it is spelled out the better.

I am a also a cupcake-aholic and the Red Velvet cupcakes in this book are to die for – and way healthier as cupcakes go. It’s nice to be able to enjoy that sweet without the white flour reactions. I’m pretty lazy and buying store bought is/was easier but after tasting this recipe…I will never return to the processed ones again.

It may take me a few months, and a few extra pounds to get through this book, trying everything out, but it will be worth it I’m sure.”
