I am a professional recipe developer, magazine editor-in-chief, television chef, freelance writer and cookbook author. I cook. I write. I travel. And I do it all gluten-free!
When it comes to food I believe the most important thing is for it to taste great. My recipes are not just “good for gluten-free” they are just plain good! Period!
When I first found out that I was gluten-intolerant, I was taken aback. I wondered how I could live without the gluten-filled cereals, pastas and breads that made up so much of my diet. My husband and I LOVED the “good food” – traveling to Italy, France, South America, Africa and China. Added to the sense of frustration was the fact that half my family was gluten-intolerant and half not. I needed to be able to prepare meals that everyone would enjoy.It was then that I decided to look at the world of food not in terms of what I can’t eat but what I CAN EAT. I looked to food itself for inspiration. I discovered a whole beautiful, abundant world of gluten-free food. I started to create dishes that would not only keep my body from being ill but that were delicious and aesthetic as well.
Thus my new food philosophy was born. Find and enjoy foods that are naturally gluten-free. I love the challenge of discovering how to re-invent old favorites and creating new ones gluten-free.

Recipe Developer for over 20 Years - Carol’s cooking skills and recipe development grew out of the necessity to cook for a growing family and became gluten-free centered after she was diagnosed as gluten-intolerant about 15 years ago. Carol is very proud to be working with her wonderful show hosts, Cyndi Edwards and Jerry Penacoli.
Gluten-free Cookbook Author- As a result of her “tasteful” recipes, Carol was awarded a cookbook contract with Thomas Dunne Books, a division of St. Martins Press. Simply…Gluten Free Desserts is loaded with 150 Dessert Recipes – cupcakes, cookies, pies, sweet breads, puddings, ice creams, cakes, and many other wonderful delights – all gluten-free and many dairy-free as well. Gluten-free Author - Carol has written and published for many on-line magazines and publications about gluten-free living and cooking – freely giving her popular gluten-free recipes to readers around the world.
Gluten-free Cooking Instructor- Having performed cooking classes for hundreds as a regular gluten-free cooking instructor at Rollin’ Oats Markets, Rollin’ Oats Markets, private chef consultations and church groups, Carol constantly teaches and educated others on simple and easy techniques and tips to successful gluten-free food preparation.
Industry Innovator - Unable to get the high-quality taste and texture results that she demanded in her recipes from existing gluten-free flours, Carol spent months developing her own Gluten-free All Purpose Flour blend that TASTES and BAKES just like real flour.
A certified Courdon Bleu Chef tested the flour for weeks in everything he could cook and bake – cakes, pies, pastries, breads, sauces, breadings, desserts and meals – it passed with amazing flying colors! Carol’s many gluten-free testers were equally amazed and pleased!
Finally! A Flour the TASTES and BAKES like a regular wheat flour but is Gluten-free!
Humanitarian - A little known fact about Carol is she has made many trips within Africa – donating her time and skills to the Red Cross in Mali, Lesotho and Swaziland. Receiving many letters of appreciation.
Also, when Katrina occurred in the New Orleans area, Carol dropped what she was doing and within 48 hours was at the “ground-zero” Central Command, volunteering and assisting the men and women of our Armed Forces and the Red Cross as they worked around the clock to save lives and secure the area. They deeply appreciated her cheer, humor, and effective help!
